| The seasons have turned once again, and the heat will be coming to visit you very soon. We thought we’d help you out by giving our readers a cool recipe that may help chill some of those long hot summer days ahead! This month’s beverage features Mango Lassi. Lassi is a yogurt based drink that originates from South Asia. More specifically the frothy dream has roots in Punjab, India, and Pakistan. The drink is typically made from a blend of yogurt and water, with salt, sugar, honey, and/or other spices depending on the preference of the drinker. Yogurt sweetened with honey is frequently used in Hindu rituals. Traditional Lassi is sometimes flavored with ground roasted cumin. The Lassi of the Punjab sometimes uses a little milk and is topped with a thin layer of Malai, a clotted cream, also known as Devonshire cream. Modern times have ushered in modern variations of Lassis, including the sweet Lassi. Sweet Lassi is flavored with sugar, rosewater, and/or lemons, mangos, strawberries, or other fruit juices. An older version of the sweet side of the Lassi is the Saffron Lassi. Saffron Lassis are especially rich, and are specialities of Sindh and Jodhupur, Rajasthan, India. If you are really feeling bold, you might be up for a Makhaniya Lassis, which are simply a Lassis with lumps of butter. Mango Lassi Recipe INGREDIENTS 1 1/4 cups plain yogurt 1/2 teaspoon lemon juice 1/2 cup fresh mango pulp 1/3 cup cold water 4 tablespoons honey or sugar Blend everything but the ice cubes in the blender until the sugar or honey is dissolved.
